Summertime Grilled Catfish Burger with Spicy Mayo

- 2 Heartland U.S. Farm-Raised Catfish Frozen Fillets
- 2 tsp Blackened Seasoning Blend*
- ½ cup purple cabbage, shredded
- 2 tbsp olive oil
- 4 tsp Kosher salt
- ½ cup arugula
- 2 sandwich potato rolls
- 4 tbsp mayonnaise
- 1 tbsp hot sauce or Sriracha
Instructions
- Preheat oven to 450 degrees.
- Preheat grill.
- Pat fillets dry with a paper towel.
- Sprinkle 1 tsp. seasoning on top of each fillet; use more as desired.
- In a small mixing bowl, combine shredded cabbage with olive oil and Kosher salt. Mix well.
- Prepare Spicy Mayo by mixing the mayo and hot sauce together. Add hot sauce as desired.
- Add shredded cabbage to baking sheet. Bake 6-7 minutes.
- Place the fish on the preheated grill. If using a charcoal grill, place the fillets about 4 to 6 inches from the heat. Grill for 4 to 5 minutes.
- Butter the cut side of the sandwich potato rolls and carefully place on the grill, butter side down, for approximately 2-3 minutes until toasted.
- Add a spoonful of spicy mayo to the bottom half of each roll. Top with roasted cabbage followed by grilled Heartland Catfish fillet and arugula. Cover with top half of roll.
