½ lb Heartland Catfish thawed
3 tbsp. unsalted butter
3 limes
1 tsp. chili powder
½ tsp. garlic powder
Pinch of salt
½ cup all-purpose flour
corn tortillas
1 avocado
½ cup of water
½ cup chopped green onions
½ cup cilantro
2 cloves of garlic
½ cup greek yogurt
½ medium head of purple cabbage
Instructions
- Preheat the Air Fryer to 400 degrees.
- Mix butter, juice from 2 limes, chili powder, garlic powder and salt in a small bowl.
- Spread catfish on a baking tray and pour mixture over catfish.
- Dredge the catfish in the flour.
- Cook the catfish in the Air Fryer for 15 minutes.
- Make the dressing.
- Blend oil, water, green onions, cilantro, garlic, juice from 1 lime, greek yogurt and salt to make slaw dressing.
- Slice the cabbage thinly and pour the dressing mixture over the cabbage.
- Slice the avocado to garnish.
- Plate the catfish over corn tortillas and top with cabbage slaw.
