Cheesy Catfish Gouda Grits

- 4 Heartland Catfish U.S. Farm-Raised Fillets
- 2 teaspoons minced garlic
- 1 cup grits
- 2 cups heavy cream
- 1 tablespoon butter, unsalted
- 8 ounces shredded gouda cheese
- ½ teaspoon olive oil
- ¼ cup honey
- 1 ½ teaspoon cayenne
- Black pepper
- Salt
- Chopped walnuts (optional)
Instructions
- Bring 2 cups of water and 2 cups of heavy cream to a boil.
- Slowly whisk in grits and reduce heat to medium-low. Cover and let cook for 5-7 minutes or until grits thicken. Occasionally stir.
- Once grits thicken, stir in salt, black pepper and 1 ½ tsp minced garlic.
- Remove from heat. Shred gouda cheese and add to grits. Combine and set aside.
- Season catfish fillets with salt and pepper on both sides.
- Heat olive oil in skillet over medium heat.
- Place the catfish fillets in skillet and cook for about 4 minutes on each side. Set aside when cooked.
- Melt butter in medium saucepan. Add cayenne and honey, stir to combine.
- Bring sauce to a simmer and stir in remaining minced garlic. Let the sauce simmer for 2-3 additional minutes and remove from heat.
- Place catfish fillets over gouda grits and drizzle with hot honey sauce. Garnish with chopped walnuts and enjoy!
