Cozy Catfish Stew

- 1 ½ lb Heartland Catfish Fillets
- 2 tbsp olive oil
- ½ whole white onion, diced
- 2 cloves garlic, minced
- 15 oz can diced tomato
- ½ cup coconut milk
- ½ cup sour cream
- 2 tbsp tomato paste
- 1 whole red bell pepper, sliced
- 1 whole green pepper, sliced
- Sea salt to taste
- Pepper to taste
- ½ tsp red pepper flakes
- 1 tbsp fresh cilantro
Instructions
- Heat oil in a large pot. Add diced onions and garlic and stir until fragrant, or for about 3 minutes.
- Add in diced tomatoes and coconut milk. Give mixture a stir.
- Add sour cream and tomato paste. Stir.
- Add sliced red and green peppers.
- Using a sharp knife, chop Heartland Catfish Fillets into chunks and add to the pot.
- Simmer over medium heat for 9 minutes and then flip the catfish. Continue to simmer for 3 minutes.
- Serve over rice or quinoa, garnish with cilantro and enjoy with a side of your favorite bread.
