Lemon Pepper Catfish

Description
This one-pan lemon pepper catfish dish will have you covered for your fish Friday meal planning needs and is on the table in less than 30 minutes.
Ingredients

- 3 tablespoons butter
- 1/2 pound sliced button mushrooms
- 1/2 medium shallot, diced
- 1 teaspoon lemon pepper seasoning
- 4 cloves garlic, minced
- 2 large Heartland Catfish fillets or 4 small Heartland Catfish fillets
- 1/2 teaspoon smoked paprika
- 1/4 teaspoon Old Bay seasoning
- Salt and pepper to taste
- 1/4 cup chopped parsley, for topping
- Sliced lemon, for serving
Instructions
- In a medium-sized skillet, melt butter over medium heat.
- Add sliced mushrooms, shallot and half lemon pepper, sauté 3-5 minutes.
- Add garlic and continue cooking for 30 seconds.
- Salt and pepper both sides of catfish fillets.
- Top vegetables with catfish fillets, sprinkle with smoked paprika and Old Bay seasoning.
- Cook, covered, for 5-7 minutes or until fish flakes easily with a fork.
- Serve topped with chopped parsley and lemon slices.
