Pumpkin Seed Spiced Catfish Fillets

- 1 cup pumpkin seeds
- ½ cup sunflower seeds
- 1 tsp cumin seeds
- 1 tsp salt
- 1 tsp black pepper
- 1 tsp cayenne pepper
- 2 egg whites
- ¼ cup olive oil
- 2 catfish fillets
Instructions
- Mix dry ingredients on a baking sheet.
- Roast dry ingredients in the oven at 350º until golden brown.
- Blend roasted dry ingredients until fine for catfish crust.
- Whisk egg whites in a bowl.
- Dip catfish fillets in egg whites and cover in pumpkin seed crust.
- Add olive oil to a pan and sear catfish until flaky.
- Finish in the oven at 350º for 10 minutes.
- Serve and enjoy!
